Crumbed Chinese 7 Spice Pork Chops with Asian Greens and Shiitake

Cole & Mason Chinese 7 Spice | 2 tsp |
Egg | 2 |
Soy | 80ml |
Mirin | 80ml |
Panko (breadcrumbs) | 150g |

Greens and shiitake | |
Asian greens - bok choi, gai lan, choy sum (washed, cut into 6cm pieces) | 500g or 1 bunch |
Shiitaki mushroom (sliced into quarters) | 150g |
Oyster sauce | 80ml |
Vegetable | 40ml |
Sesame oil | 40ml |
Sesame seeds | 8g |
Salt | 1 pinch |
Method:
1. Prepare pork chops by tenderizing with a meat mallet. Bat out until evenly thin (approx 5mm).
2. In a small mixing bowl combine Chinese 7 Spice, soy sauce and mirin. Mix well and marinate the prok chop in the mix for 1 hour.
3. Drain pork chops from the extra liquid. Dust in flour, then egg, and then panko crumbs.
4. Heat a shallow (1cm) amount of oil in the fry-pan and fry each pork chop for 2-3 mins on each side or until cripsy golden brown and cooked through. Set aside and keep warm.
5. Stir fry Asian greens with both vegetable and sesame oils for 2 mins, then add shiitaki mushrooms and cook for a further minute.
6. Add oyster sauce and work through the sauce, then remove from the heat.
7. Place the pork chop onto a serving plate and serve alongside the stir fried Asian greens & mushrooms. Top with sesame seeds.
Hints & Tips:
To achieve a good 'stir-fry' result, place Asian greens into a hot pan and drizzle a little oil on top. Allow to sear and colour without moving. This will give the singed effect similar to stir fried foods.
